Spanakorizo (spinach with rice)

This was one of my dad’s favorite dishes. It goes great with fresh bread.

  • 1 Chopped onion
  • 1 Clove garlic
  • Olive oil
  • 2 Bags fresh spinach
  • 1 Cup of rice
  • 1 Can tomato sauce


  • Sauté onion and garlic until transluscent
  • Add spinach and wilt
  • Add rice, tomato sauce plus 1/2 can water, s/p, and dill
  • Cover and simmer until rice is tender (add water as needed)
  • Remove from heat, add juice from one lemon
