Vegetable Fritatta

This is a delicious and beautiful dish that my sister made for us. Great for a brunch or for a family breakfast.

  • Eggs
  • Cheese
  • Milk
  • Tomato
  • Red Pepper
  • Shallots
  • Potatoes
  • Tarragon
  • Parsley


Saute peppers, shallots, parsley, sliced potatoes. Add salt, pepper and tarragon. Mix six eggs in a bowl with a couple splashes of milk. Put vegetable mixture in a casserole dish. Pour eggs on top, making sure that eggs are evenly distributed. Put shredded cheese on top. Slice a tomato and decorate. Add parsley. Bake at 400′ for ~10 minutes or until firm on top.
