Quick and Easy Vegetarian Hilopites

Hilopites are wonderful  hand-made, square-cut little egg noodles from Greece. This recipe makes enough for two large bowls of soup.

Ingredients:

  • 2 cans vegetable broth
  • 1 large or two medium tomatoes, grated or chopped in the food processor
  • 1 medium onion, grated or chopped in the food processor
  • 2 cloves garlic, pulverized or chopped in the food processor
  • Two large handfuls of hilopites
  • 1/2 lemon
  • Parmesean cheese

Method:

  • Heat  some olive oil in a saucepan over medium/high heat and add tomatoes, onions, and garlic
  • Saute for two minutes
  • Add vegetable broth and bring to a boil
  • Add hilopites
  • Reduce to a medium boil and cook for five minutes
  • Add juice of 1/2 lemon at the end
  • Serve with parmesean grated through a microplane
