Hilopites are wonderful hand-made, square-cut little egg noodles from Greece. This recipe makes enough for two large bowls of soup.

Ingredients:
- 2 cans vegetable broth
- 1 large or two medium tomatoes, grated or chopped in the food processor
- 1 medium onion, grated or chopped in the food processor
- 2 cloves garlic, pulverized or chopped in the food processor
- Two large handfuls of hilopites
- 1/2 lemon
- Parmesean cheese
Method:
- Heat some olive oil in a saucepan over medium/high heat and add tomatoes, onions, and garlic
- Saute for two minutes
- Add vegetable broth and bring to a boil
- Add hilopites
- Reduce to a medium boil and cook for five minutes
- Add juice of 1/2 lemon at the end
- Serve with parmesean grated through a microplane
